Interview with Rajat Parr, Michael Mina Restaurants

We recently spoke with The Grand Award-winning sommelier Rajat Parr, Mina Group’s Wine Director, about wine education, trends and Riojas at his restaurants.

 

 

Q. You have tried wines from all over the world. How would you describe the Wines of Rioja to someone that is unfamiliar with them?

 

A. Rioja is one of the undisputed legends of the wine world. All of the wines possess flavor and richness. The whites can be magnificent and age worthy. The reds are always savory, interesting, and can accompany a variety of foods.  

 

Q. What are some examples of great food pairings for Rioja?

 

A. I think there are two styles in Rioja. The modern style is flamboyant when young- perfect with lamb or beef. The traditional style is more elegant and work best with game birds (quail, squab, and pheasant).

 

Q. Over the years what is one of your most memorable food & wine pairings? What made it memorable?

 

A. I love the idea of food and wine "of the place." One of my fondest experiences was drinking Txacoli and eating tapas in San Sebastian. The overall experience is just as important as the pairing itself.

 

Q. When you get a chance to relax and get away, what are you doing and drinking?

 

A. I travel often, but I make time for R & R. I play squash regularly, I go to sporting events and I enjoy cooking for friends—especially Indian food. I drink Champagne, Chablis, and Northern Rhone reds, more or less in that order. But I also love a great red wine from Piedmont, Italy and Rioja, Spain. That's the truth.
